Cozy Up with a Bowl of Comfort: Indulge in this Mouth-watering Recipe for Creamy White Chili
Ingredients:
- 2 lbs. boneless, skinless chicken breasts, cubed
- 3 cans (15.5 ounces each) great northern beans, drained and rinsed
- 1 can (15 oz.) corn, drained
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 jalapeno peppers, seeded and minced
- 1 Tbsp. ground cumin
- 2 tsp. oregano
- ½ tsp. salt
- ½ tsp. pepper
- 32 oz. chicken broth
- 8 oz. cream cheese, softened and cubed
- 1 cup heavy cream
- Optional toppings: shredded cheese, sliced jalapenos, cilantro, sour cream
Instructions:
- In a large, heavy stockpot or Dutch oven, heat oil over medium-high heat.
- Add chicken and cook, stirring occasionally until browned, about 5 minutes.
- Remove chicken from pot with a slotted spoon, and set aside.
- Add onions, garlic, and jalapeno peppers to the pot, and sauté until softened, about 5 minutes.
- Add chicken broth to the pot and bring to a boil.
- Reduce heat, and add chicken, great northern beans, corn, cumin, oregano, salt, and pepper. Simmer for 30-35 minutes or until chicken is cooked through and beans are tender.
- Add softened cream cheese to the pot, and stir to melt into the soup over medium heat. (It’s okay if it is not all broken up yet as it will melt and blend in when all is heated).
- Slowly add heavy cream and continue to cook/stir until it is hot – 5-10 minutes. (Do not let the soup boil! It may look like a lumpy mess before smoothly blending so do not get discouraged!). Serve hot with optional toppings. Bon appétit!
